When you crave summer in the middle of the winter and find cherries at your local supermarket, it’s time to make a roasted cherries & chia dessert. Or perhaps you want to save this recipe for when you get lots of fresh cherries at your local farmers market in season. Either way, this recipe is especially good for the sour cherries. Adding sugar and roasting them makes for a perfect mix of sweet & sour flavor. Try these over ice cream, coconut yogurt, crapes or even on top of toast. It only takes 10-20 minutes to make and you can modify the amount of sugar to your preferred level of sweetness.
Adding chia seeds to this mix creates a thicker syrup consistency and, of course, adds tons of nutritional value to your dessert. If you can’t find fresh cherries this recipe should work with the frozen kind. Just make sure to leave on the counter for at least 1 hr to defrost. - Preheat oven to 400 F.
- Put cherries, sugar, chia seeds, water & salt in a bowl and gently mix. Let stand for 10 minutes for chia seeds to absorb some water. Transfer to a baking dish.
- Bake for about 10-15 minutes until juices release. Keep an eye on the cherries as they can quickly burn. It may take less or more time depending on you oven. Let cool and enjoy!
