It’s very difficult to mess up a parfait. Usually there is not much to it, just layer yogurt with crunchy granola, fresh berries and you’re done. But once in a while I come across and exceptional parfait that may take a bit longer to make but worth every extra minute. This recipe below is perfect for a post workout snack since it has added protein powder.
Not only does it have have extra protein for your muscle recovery but it is also loaded with other nutrients. Greek yogurt contains much needed calcium and toasted oatmeal provides fiber, while berries add flavor and lots of vitamins.
- 2 cups Greek yogurt
- ½ cup vanilla whey protein powder
- ¼ cup strawberries
- ¼ cup blueberries
- ¼ cup rolled oats
- 1 tbsp flaked coconut
- 1 tsp cinnamon
- Heat up the nonstick pan (on low heat) and add oats, coconut and cinnamon. Stir until they and brown up a touch. Set aside and let cool.
- While the coconut mixture is cooling, add yogurt, whey protein to a bowl and mix until well incorporated.
- Assemble the parfait starting with berries, yogurt mix, coconut mix, more yogurt & coconut mix. Top with more berries and enjoy!
