Since I can’t get my kids (or even my husband) to eat salads, I often hide greens in the yummy foods they like. Kale is perfect leafy vegetable for the job, since it’s mild in taste and virtually undetectable in ice pops & smoothies. Yet it’s loaded with tons of nutrients that are good for you.
Here is a quick and simple recipe that has been popular with my kids and their friends (they have no idea there is kale in them!). It is also refined sugar free and sweetened with maple syrup and natural sugar found in fruit.
- 1 cup ice
- 3 kale leaves
- 1 ripe banana
- 1 cup raspberries
- 1 cup strawberries
- 1 tablespoon maple syrup
- Add all ingredients in a blender and process until smooth. Pour into the molds and freeze for a few hours or overnight. Enjoy!
