One of my favorite desserts is a fruit crumble. It is also very popular with my guests after dinner, topped with vanilla ice cream its a sure crowd pleaser. The best part is that its super easy to make with simple ingredients that you may already have in your freezer and pantry. I always keep organic fruit (usually mixed but also blueberries, strawberries and mango) in the freezer for this purpose, as well as for making smoothies.
Fruit crumbles can also be easily made gluten-free and vegan by using gluten free oats and non dairy butter.
Start with defrosting frozen berries. Then mix with 1/2 cup of brown sugar.
Only 5 ingredients for the topping. Mix these well with your hands.
- Defrost frozen fruit for about 2 hours, then mix with ½ cup of brown sugar, reserve the rest of the sugar. Preheat oven to 350 degrees F and butter an 8x8 (or similar size) baking dish. Add fruit directly to the dish and spread until flat.To a mixing bowl add the remaining brown sugar, oats, almond flour, walnuts, salt and butter. Mix all ingredients until all of the butter is evenly distributed (with your hands). Add to the top of the fruit in an even layer. Bake for approximately 40 minutes or until the fruit is bubbling and the top is crisp and golden.
