A few days ago I had unexpected company, which I was happy to receive but needed to serve something to munch on. I had to quickly think of a few hors d’oeuvres that I could make. Since I almost always have cucumbers, smoked salmon and dill in my fridge I knew I had to make these ingredients work. Then I realized I also had cream cheese and voila, these tiny bites were created.
I was really excited about these, since even my kids loved this combination. So crunchy yet juicy, savory salmon works well with the sweet cucumber, fresh dill gives it a fresh fragrance and taste and cream cheese just pulls it all together. I was thrilled about my discovery… until I was uploading the images to this blog and realized that this simple recipe already exists and I wasn’t the first one to invent it. Oh well, at least my guests thought it was original 🙂
I don’t think I will be waiting for more guests to come to make these and will include them in my regular menu. Such a perfect snack for kids when they get home from school but dinner is not ready yet.
- 1 large cucumber
- ½ cup cream cheese
- a few strips of smoked salmon
- Cut cucumber into 1 inch round pieces and place dollops of cream cheese on each. Cut smoked salmon into 1 inch long strips, fold in half and place on top of cream cheese. Finish the assembly with chopped dill.
