Many of us have very busy lives these days. Running around and multitasking can take a toll on healthy eating, especially if you have to resort to eating “on the run” often. Mostly I like to grab a piece of fruit like banana but sometimes I crave something sweet and crunchy. This recipe for the Chocolate Peanut Butter Protein Bars is just perfect for these situations. Put them in a zip lock bag and throw in your purse and when you start getting hungry pop one or two in your mouth and you will feel full until your next meal.
Oats in this protein bar will supply you with fiber, which aids digestion and keeps you feeling full longer (among many other benefits of oats). Peanut butter and chocolate protein powder gives you a great amount of, well protein, as well as delicious taste. And finally, the rice crisps add a bit of crunchiness to these bars making them truly irresistible. These bars are also perfect for a quick breakfast if you do not have time to make anything else.
- 1 ½ cup quick oats
- 3 scoops Less Naked Chocolate Protein Powder
- ½ cup rice crisps cereal
- ¼ cup honey
- ⅓ cup peanut butter
- 1 teaspoon vanilla extract
- Prepare a baking dish with cooking spray and set aside. In a mixing bowl, combine all of the dry ingredients. Melt the honey and peanut butter in a small pan over medium heat, stirring frequently. Remove from the heat once it’s combined and add the vanilla. Pour the peanut butter mixture over the dry ingredients and thoroughly mix. Press the mixture into the baking dish. Allow the dish to cool in the fridge for about 30 minutes before cutting into bars.
