Who doesn’t love a good smoothie for breakfast? It’s the best way to start your day by loading up on much needed nutrients for the busy day ahead. I love experimenting with different flavors and organic seasonal fruits and veggies for my smoothies. This smoothie was one of these “experiments” and turned out delicious and nutritious.
Blood oranges are in season right now and while most people prefer their orange cousin, these red colored beauties are packed with just as many vitamins and antioxidants. Anthocyanin is the compound responsible for the red to reddish purple pigment of the fruit and is an antioxidant that is beneficial to the body. I addition, blood oranges also contain Vitamin C, Folic Acid, Calcium and Vitamin A.
Another super fruit I added to this mix is dried goji berries. These berries have been used in traditional Chinese medicine for over 2,000 years. As if all that nutritional goodness wasn’t enough, I decided to add chia seeds. These tiny seeds have many health benefits of their own but another reason to add them to smoothies is for the feel-fuller-longer effect. I find that by adding them to smoothies or oatmeal I don’t feel hungry for longer periods of time.
This smoothie will come out a little thick, which is perfect for a smoothie bowl and can be topped with nuts and coconut flakes and eaten with a spoon. But if you prefer a more liquid consistency just add a little more water and blend longer.
- 1 cup coconut water
- 1 very ripe banana
- 1 blood orange
- 3 dates (pitted)
- 1 cup mixed frozen berries (my mix had raspberries, blackberries, blueberries and strawberries)
- 1 tablespoon chia seeds
- ⅕ cup goji berries
- Starting with water add all ingredients into the blender and mix until desired consistency. If you line it thicker, you can pour it into a bowl and add toppings to it. For a smoother texture, blend a little longer, pour into a cup and drink. Enjoy!
